For over 20 years, Melody struggled with a gluten allergy. She experienced bloating and discomfort for hours after eating pasta, bread, or other gluten-containing foods. A naturopath diagnosed her with a gluten allergy in the early 2000s, leading Melody to eliminate gluten from her diet.
Living gluten-free proved challenging:
- Most gluten-free products tasted awful
- Pasta alternatives were grainy, mushy, or fell apart
- Gluten-free breads were dry and crumbly
Melody and her husband resorted to eating mainly vegetables and meat, knowing they were safe options. As gluten-free products became more available, they still failed to satisfy her cravings for pasta.
Everything changed when Melody son recommended researching European pastas made with original grains. He believed these ancient grain pastas could help her enjoy pasta once again. Margaret searched online and discovered Papa Vince pasta, fascinated by their family-owned business and unique product.
Despite the unusual appearance of the pasta, Melody was pleasantly surprised when she first tried it:
- The pasta tasted delicious, even without sauce
- It held together well, even on the second day
- The flavor and texture surpassed regular pasta
Melody realized that her gluten allergy might actually be a sensitivity to the chemicals and processing methods used in modern pasta production. Stone-ground ancient grain pasta, like Papa Vincent's, offered a healthier alternative that she could enjoy without discomfort.
As a satisfied customer, Melody encourages others to:
- Learn about their bodies and reactions to different foods
- Seek out healthier, traditional food options
- Support small, family-owned businesses like Papa Vince
After 20 long years, Melody has finally found a pasta she can savor without compromising her health or taste buds. Her story serves as a reminder that sometimes, the key to overcoming dietary struggles lies in rediscovering the wisdom of the past.

I'm so suck with autoimmune and I'm off all gluten and so I would absolutely be beyond excited to try and eat this pasta
Let us know how it works! Our pasta is very anti-inflammatory compared to regular pasta. It tested for having >1500 mg/kg polyphenol levels this year!
I'm curious as to which ancient grain is used in your pasta.
The particular one she is talking about is a blend of Khorasan ( Perciasacchi in Sicilian), Tumminia, & Rusello. To learn more read our blog papavince.com/blogs/news/best-ancient-grains
This is so amazing to hear, will have to get ahold of this pasta !!
I am from a prrovince of the philippines how about the dona elena extra virgin oil which says imported from spain i bought from the store

What an absolutely annoying voice!
Can you do 25 oz bottles in the future
Why are you yelling?
God - why scream at the start?
I received your small sample bottle in the mail a few days ago and it is the most delicious EVOO I've ever tried....never quite tasted anything like and I can tell from the sensation I felt in the back of my throat that is packed with polyphenol and very healthy. So I ordered a regular size bottle last night.....I'm doing my part to help this closely owned family business stay a float.
Fuck you for making this design, waste of money and olive oil
you leaked ur adress and phone number
NOT REALLY!! - Vitina
Classic Puglia ❤️
No mention of harvest date also lot of fake oil from Italy and spain
Had to laugh that i went to a UA-cam video and then had to use a knife to cut it open since I already cut off the bottom plastix

I appreciate his point of view on the two, for I am getting rid of my cheap plastic coffee maker & getting a moca pot/or a stainless steel pot!
@@emiliaescobar7652 his view is excellent as scientific studies do show aluminum is bad for you, some people are in denial about this though, aluminum is a cheap metal so substituting a cheap plastic coffee maker for a cheap metal coffee maker isn't an upgrade health wise, i would recommend the Groenenberg moka pot its affordable and every piece of the moka pot is made from food grade stainless steel, the grade of the stainless steel is very important as well, if you cant get that one in your country just make sure ALL the pieces of the moka pot are food grade stainless steel
@Lucas Renz ty for that recommendation on The Groenenberg, just Google it & so happy it's a 2 cup, I don't need one any bigger than that.
Refrigerate taste is the best test.. right?
Vitina Feo 1 second ago Absolutely! Just keep in mind that the time it takes for a substance to solidify increases with its volume. For example, if you put a gallon of water in the freezer, it will take more time to freeze completely than just one tablespoon of water. The same with the olive oil! If you put a bottle of 1 liter will take longer to solidify than a spoon of olive oil - thanks Vitina
Thanks for educating us.
As it got harvest date on bottle
Yes, every bottle includes the harvest date
Excellent
@@thomaspridmore106 Thanks
Can i purchase your product from India
Not yet!! we are not in India
👏👏👏
Thanks - Vitina
Hi. Can you please recommend a genuine brand in the UK ?
Beautiful!
Thanks
I bought an aluminum mocha pot at a thrift store about 5 years ago and got so hooked on the coffee I use it almost every day. I don't doubt that your experience with it is true but mine is smooth and shiny inside. I wash and towel dry it after every use then let it air dry for an hour of so before putting it away. Could it be the water PH that is making the difference? We are having two totally different experiences. I prefer stainless over aluminum any day but there is a lot of research showing that aluminum pots are unlikely to transfer enough metal into the foods and liquids to do much if any harm. There are much larger contributors such as the refined carbs and sugars we eat that cause insulin resistance which is a bigger factor to arterial disease than HDL and LDL values. Other studies suggest that the statins that are prescribed like aspirin for high cholesterol are a likely contributor to dementia because it starves the brain of good fats. In my department store experience most aluminum pots being sold today are coated with Teflon which is known to be more dangerous if used at high temperatures. You still get a thumbs up but I will not worry about my little 3 cup Moca Pot.....wait......I forgot want I was saying..... is this the Merv Griffin show?🙂
The green olives have less oil, but higher in polyphenols and other healthy constituents. So my research findings is high quality EVOO harvest should consist of approximately 70% green olives, 25% purple olives, 5% black olives. The taste of high quality EVOO will be green, grassy, slight bitter, peppery, and when you slurp to back of throat when taste testing you'll get tingle, sometimes producing a cough or two. That's a good sign of high quality EVOO with high polyphenols, very fresh. Buying "early harvest" EVOO (Oct-Dec in northern hemisphere) is ideal. Ripe olives later in season produce more oil, but less pungent, less flavor, less polyphenols. Enjoy and Blessings 🫒 💞
even the fake taste pepperi sense... what is the best way to difrenciate
You should feel the peppery sensation on your throat. This sensation does not last long. Otherwise is as you say, fake
Why don’t 😢sends to another countries please alike so much need so badly please 😢😢😢🫒🫒🫒🫒🫒🫒🫒🫒🫒🫒🫒
I wished doing so was easier, but unfortunately, it is not. Thanks for wanting to try Papa Vince.
Hello, where on the market can I buy from ur olive oil, am from Africa in Uganda
We sell only in the USA. SORRY - Thanks for your inquiry
Really nice place to live, looks awesome when can l move in thanks 😉
Sorry, it is already rented out (to me). But I will let you set up a tent in the driveway if ypu help work on the orchards :)
@@chris1963a I'm off to get me the biggest tent l can find 👍😁
Aren't you supposed to use the ripe olives? Which is when they are black and not green?
Have you done any research on early harvest?
@@vitinaevoo No, but I learnt that you should use ripe olives and juice them as quickly as possible after picking (upto hours later). You don't juice or eat unripe fruits/veggies, the same logic goes here.
@@wasmochtensietrinken When it comes to olives, early harvest is better. The polyphenol concentration is more than triple turning into an oil that have longer shelf-life and I am being conservative - thanks
